Yuca Root – The Healthy Potato

The yuca is a root commonly found in the Tropicals due to its favorable climate. It is also known as tapioca, manioc or cassava. The yuca itself is white in color with a slightly textured brown peel and it can grow as long as 11 inches. But what is the most interesting thing about yuca? It can make the most delectable of dishes, of course!  

Yuca is Versatile! 

Yuca is often fried and made into delicious yuca fries. It can also be cooked and eaten with butter, cheese and/or whatever other toppings you like. Yuca can be the base of soups, or may also be enjoyed as a side dish. This root is extremely versatile, and popular throughout the rest of the world, much like a potato.   

But What are the Health Benefits of this Precious Root? 

  1. Low Glycemic Index – Yuca has a low glycemic index of 46/100, compared to a normal potato which has an index of 78/100. This means that for those looking to control their blood sugar, yuca is the better option in comparison.  

  2. High in Potassium – Yuca has a higher amount of potassium, meaning that it can help your body maintain stable blood pressure levels as well as improve nerve function and the breakdown of carbohydrates.  

  3. Resistant Type Starch – Because yuca is a resistant starch, it breaks down glucose slowly in the body, thus helping to feed the good bacteria in the gut.

These are some of the reasons why you should give yuca a try! It is important to know that unlike potatoes, yuca are not made all the same. While in its raw form they may look it, once cooked is when the softness or dryness of the yuca can be discovered. You must try many in order to know how you prefer it. In the US you will generally find them in the freezer section of the supermarkets, already cut, cleaned and ready to be cooked. So let us know how you like them!
